Food Informants: A Week In The Life Of Izabela Wojcik, James Beard Director Of ...

Food Informants is a week-in-the-life series profiling fascinating people in the food world. We hope it will give you a first-hand look at the many different corners of the food industry. Know someone who would make a great Food Informant? Tell us why.


Izabela A. Wojcik is the Director of House Programming for the James Beard Foundation, a nonprofit organization founded in 1986 that is dedicated to celebrating, nurturing and preserving America’s diverse culinary heritage and future. Wojcik oversees more than 250 special events held at the historic James Beard House, which features chefs, pastry chefs and winemakers from across the United States and beyond.


In her role as head of House programming, Wojcik has a rolodex of culinary and beverage professionals from around the world. Part of her responsibility is engaging in constant dialogue with influencers in the epicurean industry, thereby, staying on top of the latest gastronomic trends.


Wojcik frequently appears on panels concerning food and cooking. She holds a B.S. degree from the Cornell University School of Hotel Administration in Ithaca, New York. Her culinary experience also includes positions at Marriott and Omni Hotels, Tribeca Grill and Osteria del Circo restaurants. A self-taught chef, she is proud to have been selected to cook at the four-star Chanterelle, as well as First in New York. Wojcik resides in Brooklyn with her journalist husband and son.

7:45am: I’m cooking up a storm this morning. Since I will be staying for dinner at the Beard House tonight, I need to have dinner for my 8-year-old son, Luca, my mom who’s babysitting, and my night-shift husband to take to work, so he can eat well and be a part of the family. I’m roasting chicken parts with herbs and garlic, mashing Yukon gold potatoes, stewing tomatoes and braising mustard greens, all before 8am!


And I made a Vietnamese style marinade for tomorrow’s fish dinner. Planning ahead.


10am: Surprise dentist appointment throws my morning schedule. Somehow calendar at work and iPhone didn’t communicate this one. Feel guilty for not flossing more.


11:30am: Arrive at Beard House and check in with the visiting chef team in our kitchen. My favorite way to start the day. Today’s team is chef Allen Routt and partner Jessica Bagley of The Painted Lady in Newberg, Ore. It’s an elegant restaurant, set in a beautifully restored Victorian home in the heart of the Willamette Valley. Their menus are inspired by the local Oregon bounty, presented with modern flourishes. Their last and only dinner was three years ago, almost to the date. Nice to see them again and this time I’ll be staying for dinner. The aroma of bacon and butter hits me as soon as I enter. You know it’s going to be a great day!


12:00pm: Catch up with my assistant Laura and set a plan for the day. Start to edit the next issue of Previews, which is an electronic bulletin that lists the next three months of James Beard Foundation events, both at the Beard House and around the country. This goes to our paid members nationwide and triggers reservations. It will be sent this Wednesday, so we have to finalize a number of details.


12:37: I keep lunch modest, at my desk. Small lentil soup and pumpernickel bagel from Murray’s Bagels, around the corner from the Beard House. Speaking of around the corner, Umami Burger is coming. Our office is excited. Or maybe it’s just me!


1:30pm: Take a few calls from chefs and publicists about cooking at the Beard House. Spend a few hours researching their backgrounds and restaurants. I’m scheduling the late winter and 2014 calendar.


2:30pm: Review the galleys of the upcoming Gramercy Tavern Cookbook. Gramercy Tavern itself will be celebrating two decades as a pioneer of market driven, intelligent American cuisine and service. Just for kicks I review our James Beard Award files to see what kind of accolades its garnered and am floored by the legacy: Beard Awards in the outstanding restaurant, pastry chef, service and wine service categories. Not to mention chef Michael Anthony won the Best Chef New York Award last year, in the same category that Tom Colicchio won the decade prior. Even in this rough book form the photos and the stories are beautiful and inspiring. I’m trying to host an anniversary and book party at the Beard House with this book and really celebrate the impact it has had on chefs and restaurants and our industry. Crossing my fingers. I’ll be seeing Michael Anthony on Wednesday for an event so will mention it.


3:30pm: Handwrite a few thank you notes to chefs who have cooked at the Beard House in the past couple of weeks.


3:45pm: Afternoon coffee break. Drink the Lavazza that is brewed in House. Does the job of a pick me up, but not my Grumpy Monkey!


4pm: Read our JBF blog and catch up on NY Times, NY Magazine, Eater and Chicago Tribune.


4:30pm: Practice my speech for tonight’s Beard House dinner. As the host of for the evening, my role includes acknowledging the guests’ and chefs’ support of the James Beard Foundation, introducing the chef team and reviewing career highlights, and encouraging questions from the audience. Tonight we will be joined by the vintners, Cliff and Allison Anderson of Anderson Family Vineyard, also in Newberg, Ore, who produce beautiful, organic Burgundian-style wines in such small quantities that it feels very special to drink them.


6:15pm: Sit in on the staff meeting with guest chefs and our service staff. Gives me a more in-depth understanding of the menu and will make it easier to drum up questions for the chef during the Q A at the end of the meal.

7pm: Dinner at the Beard House commences. Guests begin arriving and streaming through the kitchen to meet Allen and Jessica and the team. Some guests are members of the James Beard Foundation, but it’s nice to see so many first time-diners who are enthusiastic about food and simply made a reservation. We’re open to the public but it’s hard to shake the private club reputation. I just love the din of the greenhouse gallery as I see people eating, drinking, and socializing. I sample the hors d’oeuvres, including a foie gras mousse-filled gougère. The reception beverage is unique scotch ale from Long Brewing, in Newberg Ore., that has been aged in one of the Anderson’s pinot noir barrels. It’s got a complex flavor that really complements the food. I overhear a number of comments from self-proclaimed, beer haters who are surprised and loving it.

Dinner is outstanding. Perfectly executed, delicious, and impressive considering the chef is cooking for 80 and our waitstaff has to hand-carry the plates to the second floor. The six-course menu includes a standout Dungeness crab course that celebrates the west coast in three textures: crab cake, crab and miso custard, and crab and fresh hearts of palm salad. The others are an ethereal curried squash bisque, a translucent pheasant ravioli, slow roasted salmon with white asparagus, pistachio-crusted venison loin with dates and a chocolate decadence for dessert. The wines are paired so perfectly to each course, there’s not one element I could suggest to make it better, that I will mentally savor this dinner for a long time.

Tuesday, June 11


10:30am: Spend a little time in the kitchen with today’s featured chef, Massimo Patano of Massimo’s in Palm Harbour, FL. He has brought just one of his cooks with him -– typically chefs bring at least two or more — and will rely on our culinary student volunteers to help him execute an ambitious menu that marries classic Italian flavors in modern and eclectic dishes, such as his duck cake with a savory pistachio stuffing, accompanied by an apricot-champagne sauce and topped with seared foie gras. He is all-business and has a very tight schedule but still manages a big smile for me.


1:10pm: Lunch at my desk. Made at home, toasted Murray’s sesame bagel with salted butter, black forest ham, gouda cheese and whole grain mustard. We stock mineral water at the Beard House so I drown myself in Pellegrino every day.


2:30pm: Afternoon filled with typical work. Finalizing event files for September and October events, getting them ready to share with our publications department. Contacting chefs and publicists for missing information, such as menus and photos.


3-4:30pm: Weekly director’s meeting with our president and staff. Chance to catch up on various projects and initiatives and touch base with all points. In addition to the Beard House staff (president, CFO/COO, accounting, reservations, membership house operations and programming), we have a second office, home to our publications team, executive vice president, development, awards, special events and educational initiatives, so it’s good to catch up.


Answer emails and then rush home to pick up Luca from afterschool and get him to swim team practice.


10pm: Still answering work emails. I get a couple of hundred emails daily — some are from publicists and chefs’ teams sending event-related information. Some are inquiries about cooking at the Beard House and various other events. Some are responses to my own inquiries. I’m drinking a cocktail. My husband Howie and I love making drinks at home, and have an impressive collection of booze, bitters and glasses! I’m trying a recipe called Newport Snap from the just received 2013 Food and Wine Cocktail book. It’s basically a gin sour with a red wine float on top. It’s a gorgeous summery drink and so delicious, it’s crazy. From the folks at The Gin Joint in Charleston.

Wednesday, June 12


8:45am: Weekly Wednesday breakfast club, which has been meeting on Wednesdays 8:30 – 9:30am, since April 2004! It started as a way for me and two former roommates and college friends to stay in touch and see one another regularly. Club members are James Beard Foundation’s EVP Mitchell Davis, our friend Matt Barolo, who works for the Keith Haring Foundation and me. Occasionally we’ll have a visitor at breakfast as was the case this morning, when Amy Mills joined us. She’s the undisputed barbecue heiress, daughter of legend Mike Mills, penned the awesomely titled Peace, Love and Barbecue book and owns the 17th Street Bar Grill joints. We went to Andrew Carmellini’s newest place, Lafayette, where you CAN get in for breakfast! The coffee was excellent and the éclairs, amazing. (Yes éclairs for breakfast!) The scrambled egg and goat cheese vol-au-vent…not bad either.

12 – 1pm: Attended monthly Beard on Books lecture series, held on the second floor of the Beard House. Food personalities reading from their books, telling food stories. Alex Guarnaschelli was presenting her book, Old-School Comfort Food: The Way I Learned to Cook. But truthfully, in the way we’ve come to love her on TV as a judge on Chopped and as an Iron Chef competitor, she’s a brilliant, humorous and quirky speaker. It was a great conversation.



3pm: Watching the Beard House get transformed into a reception space to kick-off our special James Beard Foundation’s Taste America tour, coming to 10 cities later this fall. The kick-off reception will be hosted by our president Susan Ungaro and our trustee emeritus Jacques Pepin. We used Taste America’s media partner, Every Day with Rachel Ray, latest burger themed issue — the 2013 Burger Battle Royale — as inspiration of the party. We invited three James Beard winners from the story to prepare their winning burgers: Tory Miller from l’etoile and graze in Madison,WI, Michael Anthony of Gramercy Tavern in NYC and Maricel Presilla of Cucharamama and Zafra, in Hoboken, NJ.


4pm: Quick site visit with Stuart Brioza and Nicole Krasinski of State Bird Provisions in San Francisco, winners of 2013 Best New Restaurant James Beard Award among many other accolades. They’ve committed to cooking at the Beard House on November 2, but want to create a fun, walk around experience more in keeping with their vibe and certainly more challenging for us. They’re in town and this gives us a chance to meet in person. It’s amazing how many out-of-town chefs cook at the Beard House for the first time, without ever having seen the kitchen before. I feel much better when they leave.


6pm: Taste America media reception begins. Aromas start to waft in the garden and throughout the House. My strategy is to show restraint and enjoy the guests and wonderful conversations. Instead, I launch myself immediately upon Tory Miller’s Graze Burger which has bacon ground into the mix and topped with winey caramelized onions, on a homemade made bun. Yum. That leads me to Michael Anthony (of Gramercy Tavern) and his “Off-Menu” Burger with aged cheddar, pickled onions, grainy mustard and side of blue potato chips. Then I might as well sample the last burger, Maricel Presilla’s Sur Burger, set on a Portuguese bun and studded with chorizo. We also showcased Gulf Oysters from Gulf Oyster Industry Council, which are as sweet and succulent as could be. And Ronybrook’s fabulous ice cream sandwiches are served for dessert, after the speeches. Talked to Michael Anthony about his upcoming book. And plotted with Tory Miller about his return to the Beard House in December to celebrate his Graze concept and the end of prohibition with a cocktail-themed night. Got ribbed for not (yet) having invited Carla Hall, one of the Taste America all-stars to cook at the Beard House.

Thursday, June 13


10am: Review photos from last night’s Taste America kick-off. Photographer Ken Goodman not only takes beautiful photos of events, and collaborates with many chefs, but is also part of a competition new England barbecue team, and worked on two books with some of their members: Wicked Good Barbecue, and the more recent, Wicked Good Burgers. I’m hosting the Wicked Good Burger and Beer Bash in August and it’s going to be an amazing food feast. I peek into the book periodically and make myself hungry.


12pm: The guest chef tonight is Pecko Zantilaveevan of the venerable Four Seasons restaurant in New York. It’s five decades old and eternally stylish. We’re celebrating the restaurant’s past and present with a menu that includes signatures such as seafood risotto with nepitella and the deceptively simply worded fancy cake. James Beard consulted on the restaurant for its original owner, Joe Baum, so it holds a special place in our heart. Through the years we’ve hosted our annual gala and auction there, as well as celebrated James Beard birthday anniversaries. And in that honor, we have a framed 1959 winter menu that hangs in our dining room. I love showing off the menu to visiting chefs and guests, a reflection of what we were eating (and how little it cost!) at the time. New York chefs don’t usually arrive until later in the day, but Pecko and his team were in the House early.


1:15pm: A rare lunch out, at Tertulia in the neighborhood with our CFO/COO Marilyn Platzer. Long overdue catch up and a small way to say thank you to chef/owner Seamus Mullen. He graced the Beard House with a book reading from his Hero Food cookbook the week before. It was an illuminating talk about his chronic illness and his path to healing foods. And the recipes sound irresistible. I can’t wait to cook from it. And you have to love a job where you say thank you by eating lunch! We cleaned our plates of octopus croquettes, spring pea and radish salad, pressed Serrano ham, cheese and quince sandwiches, and of course, the hot churros with chocolate for dessert.


3:30pm: Spend the afternoon on the phone and email. The task of scheduling 200+ events each year starts off as a conversation about the costs, responsibilities, themes, strategies and stories to be told in food. That is then carried out by many exchanges. I have hundreds of conversations like this, with a goal of a dinner in 6-12 months, and maybe 50 percent actually end up as scheduled dinners. Most of my work deals with fostering relationships, learning about chefs and their communities and thinking about the future. But, once a date is selected, then the chef and his/her team needs to compile information I can use to create collateral with our editorial staff, which includes complete tasting menus and matching wines and beverages. The calendar is then subject to regular, demanding publication deadlines, with long lead times, that conflict with the current cooking trends of hyper local/hyper seasonal and highly market driven. I’m always hounding chefs for menus to be published months before they actually arrive.

Friday, June 14


10am: No event at the Beard House today, by design. We’re getting ready to host our biennial cookbook sale on Saturday, and have tons of boxes arriving today. We have remnant books collected from the last two years. Donations and drop offs, some culled through the James Beard book award submission process. Some have been donated by the Fales Library at New York University. The day will be used to sort, price and organize close to a thousand books, largely by director of house operations Victoria Jordan Rodriguez and her team of staff and volunteers. Phew.

12pm: I review the Unofficial Mad Men Cookbook by Judy Gelman and Peter Zheutlin. Found it online. I’m planning the Mad About Mad Men cocktail party at the Beard House for Friday July 12th. The idea is to feature the classic restaurants, dishes and cocktails that have appeared on the show or are inspired by that era. I scheduled the party to coincide with the end of the current season. I’ve confirmed thus far Keens Steakhouse, 21 Club, Delmonico’s and the Oyster Bar at Grand Central, but as the date is fast approaching, I really need to work out the dishes and the drinks.


2pm: I curate the Greenhouse Art Gallery in the Beard House, which features food-themed motifs, six times a year. The July/August show will focus on the works of John Greeley- large, colorful paintings inspired by his skateboarding and graffiti culture. He’s not only an artist but also the chef of the 21 Club. I love that he’ll be cooking at the Mad Men party, in the same space where we show his work. We have a check-in phone call about when he can get his work to the House, when to hang, and when to schedule his private artist reception.


3pm: Spend the rest of the afternoon returning calls and emails. Wide ranging exchanges about the Parrot Club in Turks and Caicos, Bistro du midi in Boston and a big French truffle dinner in the winter.


4pm: Finalize a preorder of cronuts from Dominique Ansel bakery in Soho as a surprise to my colleagues. There’s been such a media frenzy surrounding this croissant-donut hybrid, not to mention reports of crack-of-dawn waiting lines and an emerging black market on Craigslist, I finally succumb to the noise. I’m placed on a wait list and schedule a time for late July. By the time the date arrives it will be lovely surprise.

  • Larry Austin, Whole Foods Detroit Store Manager


    Larry Austin got his start in the grocery world as a bagger, cashier and stocker at the Detroit chain Farmer Jack’s in 1988. He headed to Ann Arbor soon after and stocked the grocery, dairy and frozen sections at Arbor Farms for a few years before joining Whole Foods Market’s Ann Arbor store as a receiver in 1999. Larry worked his way up from receiver to grocery buyer and eventually Grocery Team Leader, then went on to manage multiple departments in various stores across the Midwest. Now he’s running the show as Store Team Leader — that’s what the people at Whole Foods Market call the store manager — at the company’s highly anticipated Detroit store, which opened June 5. Larry’s at the helm.

  • Jay Isais, Senior Director Of The Coffee Bean Tea Leaf


    Nearly seven million pounds of coffee beans pass under Jay Isais’s eyes and nose each year at The Coffee Bean and Tea Leaf’s Research and Distribution facility in Camarillo, CA. Isais oversees the blending and roasting of all of those beans. Isais began his career in the early ’80s with Hillside Coffee. He then held operations management and buying positions at Brother’s Gourmet, Gloria Jean’s, Coffee People Worldwide, and Diedrich Coffee before joining The Coffee Bean Tea Leaf in 2000.


    Isais’s primary responsibility day to day is making sure the quality of Coffee Bean Tea Leaf’s coffee is, as he says, “perfect from start to finish.” To accomplish this, he evaluates shipments of green beans, working with Master Roaster Jesse Martinez-Beltran on finding the perfect roasts for each varietal, or blend, and tasting the brewed product. Isais also spends much of his time sourcing coffee from the finest coffee farms around the world, establishing and maintaining one-on-one relationships with coffee growers at the points of origin — a hallmark of the company’s philosophy.


    Isais is a founding member of the Roasters’ Guild, is a volunteer instructor for the Specialty Coffee Association of America and a certified judge for the Cup of Excellence® program. He is also a licensed Q grader and an APICS Certified Supply Chain Professional. Isais is additionally a judge at cupping competitions around the world, most recently the Hawaii Coffee Association’s cupping competition.

  • Aaron Franklin, Barbecue Guru


    Aaron and his wife Stacy debuted Franklin BBQ in late 2009 on an East Austin parking lot. From the walk-up window of a travel trailer turned brisket stand, patrons quickly noticed the Franklins were selling the best barbecue around. By spring, the line of admirers snaked around the block, and the press followed. In less than two years, the duo could count contributors from The Washington Post, Texas Monthly, and Cooking Channel among a growing chorus hailing Franklin among America’s BBQ elite–mentioned in the breath as Smitty’s, Kreuz’s and other stalwart temples to the holy craft of smoked meat that line the Central Texas brisket belt. In the summer of 2010, Bon Appetit hailed Franklin BBQ as the best in America.


    Aaron and Stacy quickly outgrew their trailer, and moved their operation to a brick and mortar location in March of 2011. And despite the new digs and every reasonable effort to increase production, Franklin BBQ’s line is as long as ever, and the restaurant has sold out of brisket every day of its existence.

  • Daniel Boulud, Chef


    Daniel Boulud, a native of Lyon, France, is today considered one of America’s leading culinary authorities and one of the most revered French chefs in New York, the city he has called home since 1982. Daniel is chef-owner of db Bistro Moderne, DBGB Kitchen and Bar, Bar Boulud, Café Boulud, Boulud Sud and Épicerie Boulud. In all his restaurants you’ll find the warm welcome the chef is renowned for, combined with traces of the soulfully satisfying traditional cooking he grew up with on his family’s Rhône Valley farm. Yet Daniel Boulud is best known for New York’s exquisitely refined DANIEL, the three Michelin-star Relais Châteaux restaurant. You’ll also discover the chef’s French-American cooking in Miami and Palm Beach, Florida and internationally in London, Singapore, Beijing, Montréal and Toronto. Boulud is the author of seven cookbooks, the recipient of three James Beard Foundation awards, including Outstanding Chef and Outstanding Restaurateur and was named a Chevalier de la Légion d’Honneur by the French government, as well as Chef of the Year 2011 by The Culinary Institute of America. He is a generous and energetic supporter of Citymeals-on-Wheels, serving on their board of directors since 2000 and is also co-founder and Chairman of the Bocuse d’Or USA Foundation.

  • Josh Reynolds, President Of World’s Largest Maraschino Cherry Company


    Josh Reynolds is the president of Gray Company, home of the CherryMan brand and producer of more than two billion maraschino cherries a year. Although Gray Company started in Oregon in 1908, Josh’s family has been involved since 1982. After graduating from Colby College, Josh worked as a producer and on-air talent for one of Portland’s top radio stations. He returned to the family business in 1996, earned his MBA from the University of Michigan in 2001, and was promoted to president in 2008.


    As president, Josh directs sales, marketing, operations strategy and all new product development initiatives. Outside of work and cherries, you’ll find Josh spending time with family, volunteering in the Portland community, staying in shape and playing music. Josh is currently involved with the I Have a Dream Foundation of Oregon, the National Cherry Growers and Industries Foundation, and the Young President’s Organization Oregon Evergreen Chapter. For all his accomplishments in both business and the community, Josh was named one of Portland Business Journal’s “Forty Under 40.” Married with two sons, Josh relishes spending their weekends on Mt. Hood where they ski, hike and relax.

  • Debi Mazar Gabriele Corcos, Living On $1.50 Per Day


    Actress Debi Mazar and her Tuscan-born husband, Gabriele Corcos host “Extra Virgin” on the Cooking Channel. They recently participated in the Live Below The Line Challenge, a campaign that encourages people to think about poverty in new ways. They each had $1.50 per day to spend on food — the U.S. equivalent of the extreme poverty line. As a family of four, their weekly budget was $30 for five days of meals.

  • Paul Tanguay Tad Carducci, Cocktail Consultants


    Paul Tanguay and Tad Carducci are beverage consultants and partners in Mercadito Hospitality group. In this role, they create and manage the beverage programs at the group’s concepts throughout the country, including Tavernita, Little Market Brasserie and Mercadito in Chicago as well as Mercadito in Miami and New York. Most recently, the Bros. and the Mercadito Hospitality group are currently developing Tippling Hall, a new concept in Chicago’s River North neighborhood that will debut later this summer.

  • Heather Bailie, Fatted Calf Charcuterie Director of Operations


    Heather Bailie discovered a passion for all things meat as a young girl. Inspired by her father and grandfather’s hunting adventures, Bailie learned at an early age that cooking and butchery are about mindful involvement in what you eat. This philosophy followed her throughout her culinary career. After obtaining a degree from the California Culinary Academy in 2006, she worked in Michelin one-star restaurants — Acquerello in San Francisco and Ubuntu in Napa — before changing course to learn butchery and charcuterie full-time. Yearning to get back to her roots, she pursued work with Toponia Miller and Taylor Boetticher at their artisanal charcuterie in Napa, The Fatted Calf.


    Working at the Fatted Calf that gave Bailie her foundation for cooking, but also life: work hard, work smart, do your best, never underestimate your abilities, and then work even harder! Bailie quickly moved up the ranks; she was promoted to Kitchen Manager and then Production Manager. In 2012, she was made Director of Operations and Partner. She oversees the Fatted Calf’s two retail stores in Napa and San Francisco and a team of 40 skilled meat enthusiasts company wide. Together the stores produce a variety of handcrafted salumi, sausage, pates, confits and roasts, as well as fresh cuts of pork, lamb, beef and poultry.

  • David Padberg, Executive Chef Of New Restaurant


    Raven Rose Chef David Padberg is a veteran of some of Portland, Oregon’s greatest restaurants. Beginning his career as a pastry chef in Kansas City, he quickly moved up the line. In short succession, he trained with James Beard Award winning chefs, at a Swiss chalet, and with Wildwood’s Cory Schreiber, developing his palate and skill with seasonal ingredients. In 2003 Padberg became the opening sous-chef at clarklewis. In 2004 he was hired by Park Kitchen’s Scott Dolich as Executive Chef, where he was known as “One of the great forces that moved Park Kitchen forward.”


    Now at the recently-opened Raven Rose, Padberg’s menu reflects both the history of the 1883 Ladd Carriage House as well as the traditions of rustic cuisine — taking inspiration from both early American farmhouse cooking and the culinary traditions of Ireland and the British Isles.

    “Working as a chef on a ship is unlike anything I’ve experienced on land. I spend time in kitchens all over the world’s oceans, and from the moment you step onboard, it’s rock-and-roll, and I don’t mean the ship moving. I mean it’s crazy fast, so intense sometimes that you can’t even believe the day has passed. And it’s like music, fast and rich and full of life. Music is my thing. I cook with it, I hear it even when it’s not playing, it’s in my head. Food cooked with music stirring the soul is food cooked with extra passion. There’s not much difference between a chef and an orchestra conductor. We’re both artists in what we do, and we both are at the center of many critical pieces, parts and players. When it all works together, it’s pure harmony, from the bottom of the heart.

    So how did I get here? I was born in the small town of Konskie, Poland. As a little boy, I spent much time in my mother’s kitchen. I’ll never forget the cheese crepes she made in the mornings, the smell would make sure that I would get out of bed and get right to work. At the age of 15, I discovered my passion for food, when helping on my grandparents’ farm, with butchery. I then moved to Germany to help my sisters with their restaurants. Since then, I’ve worked with many great chefs, and have been trained in French and European techniques. In 20 years as a chef, I’ve learned many styles, including modern approaches such as molecular gastronomy and sous-vide – and here I am. And it’s been a long, road to where I am today, in Hawaii, on Celebrity Century. I can’t even begin to count all the countries I’ve visited in the last 20 years.


    A few days ago, I was in South America, in Montevideo, Uruguay, where I left Celebrity Infinity, flew to San Diego, and on to Hawaii, where I boarded Celebrity Century to provide leadership to our hardworking team of cooks.”

    In 2012, David was nominated and awarded the most prestigious honor that could be bestowed to any Loews Team member, The Loews Legend Award. David is not only passionate for his job as a Concierge but he also loves living in Miami Beach where he gets the opportunity to walk his beloved and very spoiled Italian greyhound “Samsom.” Living in the middle of South Beach, David often thinks about things that would create a more lasting good impression on visitors. He believes a more efficient transportation system would make it easier for them to have access to other popular South Florida destinations such as Fort Lauderdale, West Palm Beach and the Keys.

    Gregory Hall, a craft brewer, is now at the helm of Virtue Brands, the new Chicago-based branch-to-bottle cider venture that uses Midwestern heirloom apples to produce a series of ciders. In his new role as ciderist, Hall hopes to bring craft cider to the level where craft beer is today in America in terms of quality, variety and accessibility to the consumer.


    Known for his 20-year tenure as brewmaster at the Goose Island Beer Company, Hall began his brewing career in 1988, the year his father, John Hall, opened the brewery. Greg attended Chicago’s brewing school, the Siebel Institute, graduating in 1989. In 1992, Hall become the brewmaster of Goose Island Beer Company and under his direction, the brewery flourished and expanded its draft and bottle beer lines. Hall stepped down as Brewmaster of Goose Island in May 2011 to pursue cider making. He maintains his ties to Goose Island as a consultant.


    Greg Hall is a long-time supporter Chicago food community and many local organizations such as Slow Food Chicago, Chicago’s Green City Market and the Chicago Rarities Orchard Project. He is an avid cyclist and currently resides in Chicago with his two children — Sofie and Henry.

  • Steve Smith, Tea Maker


    Steve Smith is one of the world’s leading tea makers and entrepreneurs. In 1972, Smith was a young partner in the first natural foods store in Portland. Expanding on these roots — and the joys of tea learned from his grandmother and time spent in Southeast Asia — he and two partners founded the Stash Tea Company. The trio introduced herbal and specialty black teas to retail and food service accounts throughout North America, eventually growing to become one of the largest-selling food service specialty tea brands in the country. When Stash was acquired in 1993 by Yamamotoyama, the oldest tea company in Japan, Smith left to pursue a new vision, which came to be known as Tazo.


    Smith is credited in developing over 60 proprietary blends in multiple beverage formats — many of which remain Tazo’s top selling teas today. In January of 1999 Tazo was acquired by Starbucks, and Smith and his team continued to lead the company until January of 2006.


    Parting ways with Starbucks and Tazo in 2006, Smith moved to Avignon with his wife, Kim and their 10-year-old son. But after a year, the path of tea called them all back to Portland. He’s now perfecting his new signature line: Steven Smith Teamaker.

  • Jeni Britton Bauer, Ice Cream Maker


    Jeni Britton Bauer has created ice cream for more than 15 years. Drawing from her traditional pastry training and a pantry of exceptional ingredients, the Columbus resident continues to perfect the frozen desserts for which her company, Jeni’s Splendid Ice Creams, is known. Jeni first discovered her love for dessert while working at La Chatelaine bakery in Columbus, Ohio. Her passion for ice cream eventually led to the opening of her first ice cream shop, Scream, in 1996 in Columbus’ North Market. With the help of her business partner and husband Charly, she founded Jeni’s Splendid Ice Creams in November 2002 in the same market where she operated her first scoop.


    Now, Bauer is the owner and creative director of eight elegant scoop shops in central Ohio, one in Chagrin Falls, Ohio, and one in Nashville, Tennessee, with individual pints available online and in freezer aisles throughout the United States. Her ice cream has been praised by Time magazine, the Washington Post, USA Today and countless other media outlets throughout the country.   • Amanda Hesser Merrill Stubbs, Food 52 Founders


    Amanda Hesser is an entrepreneur, best-selling author and has been named one of the 50 most influential women in food by Gourmet. As a longtime staffer at the New York Times, Hesser wrote more than 750 stories and was the food editor at the Times Magazine. She has written the award-winning books “Cooking for Mr. Latte” and “The Cook and the Gardener,” and edited the essay collection “Eat, Memory.” Her last book, a Times bestseller and the winner of a James Beard award, is The Essential New York Times Cookbook. Hesser is a trustee of Awesome Food, and is an adviser to the Spence Foundation, Real Time Farms and Fondu.


    Merrill Stubbs grew up in New York City and after graduating from Brown University with a degree in Comparative Literature, she honed her cooking skills at Le Cordon Bleu in London. Later, she interned in the test kitchen at Cook’s Illustrated and was a private chef and cooking instructor. While she was in Boston, she also worked with Joanne Chang at Flour Bakery + Café.     Emiliano Lee comes from a long line of grocers and his passion for cheese dates back to his childhood in Oakland, where he could be found stealing bites of Rouge et Noir brie from the wheel in his father’s desk drawer and spending his allowance at the 6th Avenue Cheese Shop in San Francisco. After working as a cheesemonger throughout the country, Lee is now the Artisan Market Manager for Farmshop in Los Angeles. Since 2009, Lee has served as a judge for the American Cheese Society, affording him the opportunity to taste thousands of cheeses from hundreds of North American producers, and provide them with valuable aesthetic feedback.     January 2010 found Dan Earnest and Carrie Megginson moving in to their picturesque farmhouse in the beautiful South Central Allegheny Mountains of Pennsylvania. In the spring, they acquired their first Tamworth cross piglets and began dedicating their time to raising the happiest, pastured, heritage-breed pigs in the region.     David Wondrich was educated — in between stints as boatyard worker, bass player, process server and a dozen other things — at New York University, where he earned a Doctorate in Comparative Literature in 1997. After a brief career as a Shakespeare professor and a briefer one as a jazz critic, he fell into a job writing about drinks for Esquire magazine, an occupation he has happily persevered in ever since. Widely acknowledged as the world’s foremost expert on the history of the cocktail, Dr. Wondrich is the author of countless newspaper and magazine articles and five books, including 2007′s Imbibe! (which won a James Beard award) and Punch, which was released to wide acclaim in late 2010.     After learning to cook at his mother’s bed and breakfast, Daniel Klein went on to work and train at many of the world’s top restaurants. His culinary education brought him to Spain, France, England, India and New York, where he has worked and trained at top Michelin starred restaurants including The Fat Duck (Heston Blumenthal), St. John (Fergus Henderson), Mugaritz (Andoni Luis Aduriz), Bouchon (Thomas Keller), Applewood (David Shea) and Craft (Tom Collichio).   • Stewart Hawthorn, Craft Salmon Farmer


    Stewart Hawthorn is the the principal farmer for all of Skuna Bay’s salmon farming activities. He began farming salmon on the west coast of Scotland almost 25 years ago, first on the Isle of Skye, and later at Loch Sunart and Loch Diabeg. After gaining experience in Europe, North America called and life found Stewart working at Limekiln Bay on the eastern coast of Canada. New Zealand was his next stop, raising salmon in the Marlborough Sounds and savoring the region’s wines. In the early 1990s, Stewart took a sabbatical from salmon farming and spent several years in rural Papua New Guinea, where he worked to implement sustainable freshwater carp pond farming at the village level. Now at Skuna Bay, Stewart believes that by farming salmon, he helps to reduce the influence of invasive practices of large scale fishing companies and the pressure on wild salmon populations. When Stewart isn’t busy crafting salmon, or caring for his extensive family, he can still be found along the water swimming in lakes and rivers. He also plays squash, and enjoys hiking and running. He is a member of the BC Salmon Farmers Association, and sits as a Board Member at Vancouver Island University.

  • Amy Bandolik, Food Tour Director


    Amy didn’t dream of a career in the food industry. She spent 12 years as a Career Counselor and by 32 she was working at New York University teaching seminars such as Don’t Quit Your Day Job and The Quarter-Life Career Crisis. That is, until she had a (slightly delayed) quarter-life crisis of her own. After a series of single-girl-in-the-city heartbreaks and with a family history rooted deeply in New York mom pop shops, she redirected her energy and dove headfirst into being a NYC tour guide for a Food Tasting Cultural Walking Tour company. In 2008, Amy officially quit her day job and began working full time (behind the scenes). Amy is the Director of Operations for Foods of New York Tours. The company offers food tours seven days a week, 360 days a year. Amy supervises a troupe of 14 tour guides and maintains relationships with the staffs of the 50 plus restaurants and food shops in the five Manhattan neighborhoods that the Foods of New York Tours highlights. She walks the streets of NYC to find the best food and the most interesting off-the-beaten path sites in order to create new (and enhance current) Food Tours. And since Amy has to eat out A LOT for her job, she is also a proud Weight Watchers member as well.
